In chemistry, an alcohol is any organic compound in which a hydroxyl functional group (-O H) is bound to a carbon atom, usually connected to other carbon or hydrogen atoms.

An important class are the simple acyclic alcohols, the general formula for which is CnH2n+1OH. Of those, ethanol (C2H5OH) is the type of alcohol found in alcoholic beverages, and in common speech the word alcohol refers specifically to ethanol.

Other alcohols are usually described with a clarifying adjective, as in isopropyl alcohol (propan-2-ol) or wood alcohol (methyl alcohol, or methanol). The suffix -ol appears in the IUPAC chemical name of all substances where the hydroxyl group is the functional group with the highest priority; in substances where a higher priority group is present the prefix hydroxy- will appear in the IUPAC name. The suffix -ol in non-systematic names (such as paracetamol or cholesterol) also typically indicates that the substance includes a hydroxyl functional group and so can be termed an alcohol, but many susbtances (such as citric acid, lactic acid or sucrose) contain one or more hydroxyl functional groups without using the suffix.

Q. Alcohol is a by product in the maufacturing of Bread. The flavour and taste comes from alcohol in all fermented foods. Indian foods like Idli, Dosa, Appam, Protta all doughs are kept for fermentation before preparation. In olden days Gripe Waters had about 12% alcohol and our kids were bonny and disease free. Alcohol contents in liquid medicine removed only for excise exemptions, otherwise it is an elixir of life. Why the hippocracy about alcohol ?

A. And I'd add that orange juice (and other natural fruit juices) typically carries about 1% alcohol. Which is more than those fermented breads carry after baking (heat drives off alcohol, you know?). Hypocrisy about alcohol? I don't see that except in individuals, like the Mothers Against Drunk Driving leaders who've been cited for DUI or reckless operation. What I do see is a certain degree of hysteria among some. Alcohol abused, of course, is a big problem for the individual and can contribute to hazards for others as well. Some extrapolate that if too much alcohol is bad, all alcohol is bad to some degree, and the only good is to eliminate as much of it as possible.
